Haylee Apperson

With an immense passion for food and a desire to share with people to abundance of Boulder’s Harvest, Haylee and her husband opened Magnolias Street Food, a farm to bus cafe in 2014. After finding out a family was in their future they made the decision to do their best to root themselves in Boulder, Utah. Not an easy thing to do from scratch. They knew that this was the best life they could offer their children. A life built on resilience, knowledge of where our food comes from and a deep connection with mother nature. With their two girls, Magnolia and Emmylou by their sides they have managed to keep this life a go. While still working out the kinks, they have made their family a part of the vibrant Boulder community.

Laura & Monte Bledsoe

Owners of Quail Hollow Farm

Laura and Monte Bledsoe are the owners of Quail Hollow Farm, a small all organic full-diet farm in Southern Nevada. Monte and Laura were originally inspired to become farmers by visiting the Founders farms in the Eastern United States and were impressed by the sense of stewardship that they had for the land. Feeling the call to provide wholesome food for their family and community, they founded Quail Hollow Farm CSA (Community Supported Agriculture). Now the farm has grown to service over 100 families, several notable restaurants and farmers markets throughout southern Nevada. Battling challenges they encountered with local authorities, they successfully worked at the 2013 Nevada Legislature to pass the “Farm to Fork” and Cottage Food bills. Laura is passionate about preserving indigenous seeds, foods and culture. Monte is passionate about self-sufficiency, health and close community relationships. Together they love working to promote healthy soil and healthy families.

Brynn Brodie

Owner of Red House Farm

Brynn Brodie is the owner of Red House Farm, a “homestead plus” in the heart of town. The farm offers organic produce, fresh-baked breads and other value-added goods at the weekly Community Market and through an on-site farmstand. The farm also hosts community events such as the Annual Boulder Harvest Festival, workshops such as animal processing and felting, music events and theatre productions. Brynn is a board member of the Boulder Skills Foundation, through which she organizes weekly garden tours in town. She also works part-time at the nationally renown farm-to-table restaurant Hells Backbone Grill, where she promotes local food and home gardening to folks from around the world.

Scott Brodie

Scott has been living off grid in Boulder, Utah for almost 20 years, working a variety of jobs to keep him there. He is a certified Permaculture designer, has served on the Boards of the Boulder community Alliance and True Nature Farm, Established the Boulder Freebox an Toolshare and co-created Red House Farm. His passions are resiliency in these brittle times, repurposing old stuff and having fun doing it.

Dr. Shanon Brooks

President of Monticello College

Dr. Shanon Brooks is the president of Monticello College, a unique school that combines georgics, the liberal arts, manual arts, and entrepreneurship resulting in debt-free, mortgage-free, self-reliant graduates. He is the author of The State of American Education and A Thomas Jefferson Education for Teens.

Dr. Brooks is a veteran of military service in the United States Submarine Fleet and holds a Bachelor’s degree in business administration, a Master’s degree in education, and a Ph.D. in constitutional law. On a personal note, he loves operating his backhoe, hiking, and the renewing force of permaculture. He and his wife Julia live on the campus of Monticello College.

Liz Carlisle

Lecturer in the School of Earth, Energy, and Environmental Sciences at Stanford University

Liz Carlisle is a Lecturer in the School of Earth, Energy, and Environmental Sciences at Stanford University. Her first book, Lentil Underground, won the Montana Book Award and the Green Prize for Sustainable Literature. She is the co-author, with Bob Quinn, of the new book Grain by Grain: A Quest to Revive Ancient Wheat, Rural Jobs, and Healthy Food.

Heather Carter

Owner of Nature Hills Farm

Heather Carter was born in the desert of Nevada and started gardening as a young teen.  She landed in Cedar City, graduating from Southern Utah University with a Masters Degree in Education. After spending time in England and Hawaii she returned to Southern Utah and cultivated Nature Hills Farm. In 2018 Heather celebrates her tenth year of farming and remains committed to the process by attending weekly farmer’s markets, teaching classes, and hosting annual community events on her farm.

Joshua Michael Choate is the President of the School of Natural Philosophy and a teacher of Natural Philosophy, Wellness, Herbalism and Permaculture Design. He is also the Director of Living Campus Operations at Monticello College.

He is a Certified Permaculture Design Consultant through the Central Rocky Mountain Permaculture Institute. He mentored under Peter Bane (The Permaculture Handbook, 2012) and Jerome Osentowski (The Forest Garden Greenhouse, 2015). He is the designer of Monticello College Living Campus where he leads a Permaculture Design Certification Course annually and related coursework and workshops.

Together with his wife Amy, Joshua founded, owned and operated the Natural Philosophy Organic Market and Yoga Studio in Logan, UT. While thus engaged, he offered countless lectures on natural diet and lifestyle and consulted with thousands of individuals in herbal nutrition. He also experienced firsthand the precarious and inefficient nature of our food supply chain and inherit deficiencies in mainstream food quality. This instilled in him a deep desire to liberate individuals, families and communities from nutrition scarcity and economic slavery through Natural Philosophy and Permaculture Design.

He is a student of Katri Nordblom, ND and certified under the Nordblom American Institute of Footzonology as a Footzonologist, Master Footzonologist and Zoning Coach.

He is a practicing herbalist and has studied with Dr. Patrick Jones (The Home Grown Herbalist). He has been strongly influenced by the works of John R. Christopher, Maurice Mességué and Stephen Buhner. He teaches classes in herbal nutrition, herbal medicine and wild crafting.

Joshua is a native of Cache Valley, Utah and currently resides in beautiful South Eastern Utah with his wife and four children on the Living Campus at Monticello College.

Alison Einerson

Executive Director of Urban Food Connections of Utah

Alison Einerson is the Executive Director of Urban Food Connections of Utah, the food-centric non-profit that manages the Downtown Farmers Market, Rio Grande Winter Market, Tuesday Market, and the ongoing development of the planned year-round Public Market in Salt Lake City. Einerson has been involved in the local food community for many years, as former Executive Director of Local First Utah, as a writer and editor for local publications, and as a food preservation instructor. Einerson holds a Master Canner Certification and loves to make pickles and salsa. She enjoys collaborating on projects such as Eat Local Week with other non-profits in the community, including Wasatch Community Gardens and Slow Food Utah. She holds a B.A. in English and Women’s Studies from the University of Utah.

Prior to this role, Einerson served as the Director of Marketing and Public Relations for Gibbs Smith, Publisher, working extensively on cookbooks, lifestyle and architecture books. She spends her free time digging in the dirt, cooking food, climbing red rock, and riding her bike with her husband, two daughters, two dogs, and one fat cat

Sally Fallon Morell

Co-Founder of the Weston A. Price Foundation

The Weston A. Price Foundation (WAPF) was co-founded in 1999 by Sally Fallon Morell and nutritionist Mary G. Enig. It is a U.S. 501(c)(3) non-profit organization dedicated to “restoring nutrient-dense foods to the American diet through education, research and activism.” Its goals include disseminating the research and dietary advice of dentist and nutritional researcher Weston A. Price, who studied the foods and health of isolated non-industrialized peoples around the world, and supporting the scientific validation of traditional diets.

Eric Feiler

Eric Feiler is a student of Dr. Elaine Ingham, one of the foremost pioneers in regenerative agriculture and soil micro-biology. He is currently finishing his consultant certification program through Dr. Ingham’s company Soilfoodweb.org. His focus currently is on making high-quality, biologically diverse thermal-compost in an extremely arid environment. He is also working with local landowners to transition their properties using soil food web methodologies.

Owner of Sego Resturaunt

A native of Kanab, Utah, Executive Chef Shon Foster takes a thoughtful approach to food, blending contemporary cuisine with local & international traditions. Chef Shon’s career path led him to the role of executive chef at Amangiri, which was named one of “America’s Best Hotels for Foodies” by Travel & Leisure in January 2013. Amangiri is a boutique resort tucked into the canyons of Southern Utah at Canyon Point, near the Arizona border, and a member of Aman Resorts, a collection of luxury resorts around the world. While at the helm of the kitchen at Amangiri in 2012, Chef Shon has featured dishes that highlight ingredients & culinary traditions native to Utah & the Southwest, while integrating flavors from around the world – a nod to Aman Resorts’ global profile. His passion is to let the pure flavors of the ingredients shine through while allowing room for experimentation and spontaneity.

Chef Shon’s next venture led him back home to open Sego Restaurant in Kanab Utah. The result is an evolving menu that showcases his creativity in the kitchen and captures the vibrancy of the local culinary landscape. Chef Shon has charted his own path in the culinary world, spending a handful of years as a recording engineer in the music industry before discovering his passion of the culinary world and fine dining. His efforts have culminated in an invitation to the 2013 & 2014 Pebble Beach Food & Wine Festival and most recently, his whimsical approach to food titled “S’mores School” was a popular display at the Nashville Southern Ground Music and Food Festival, catering for high end car companies around the united states. Chef Shon also has represented Utah and its culinary scene in Germany to promote Southern Utah tourism, and added public speaking at local farm conferences and economioc development seminars to his most recent experiences.

Jed Johnson

Jed Johnson grew up on his family’s cattle ranch in Central Utah where he learned the value of hard work and efficiencies of production agriculture. After returning home from a 2 year church mission to Hong Kong, he attended Utah State University. While there he received his bachelor’s degree in Civil Engineering. Upon graduation the desire for his 4 boys to grow up on a farm took root. He left his engineering career opportunities and traded them in for a cowboy hat.

Coming back to the family farm was rewarding and full of challenges. Jed found himself looking for new ways to create revenue which lead him to working with Redmond Heritage Farms raw milk dairy. This opportunity opened up a new approach to agriculture along with a new set of challenges. The niche market of producing high quality raw milk and other farm fresh products has become an interesting endeavor full of rewarding experiences. Seeing the role that these products can have in elevating the human experience has changed Jed’s paradigm and added breadth to his already growing experience. Along with working on the raw milk business, Jed also helps Redmond with sales and marketing across their Ag and Equine brands.

When Jed is not coaching his boys sports games, or building fires to heat his home with, he is assisting his wife Nanci with her start up business in marketing technologies.

Founders and Owners of Singing Frogs Farm

At Singing Frogs Farm, Elizabeth and Paul have applied their unique backgrounds in farming, nutrition, public health and agroforestry to develop a highly intensive, no-till, ecological management system for their small but mighty vegetable farm and CSA. Learn how to adopt their techniques to bring tremendous benefit to your farm or garden’s soil, increasing yield and improving the natural ecology. The Kaisers grow over 100 different crops year-round on three acres, a third of which goes to their 130 member CSA and two-thirds to various farmers’ markets, restaurants and a local food hub.

The Kaisers method of farming has resulted in an increase of over 300% in their soil organic matter, while drastically reducing their water use, and generates over $100,000 per acre in sales.

Pete Kennedy

Pete Kennedy is a Florida attorney who has worked on issues governing raw milk production and distribution since 2004. He compiled a summary of raw milk laws in each of the fifty states and is currently a consultant for WAPF on, among other things, policies and laws regarding raw milk. Pete was a founding board member of the Farm-to-Consumer Legal Defense Fund (FTCLDF) and served as vice president and then president for many years. He has consulted on and drafted raw milk, cottage foods, and food sovereignty legislation; drafted and reviewed herdshare agreements; worked on embargo, seizure, and recall cases involving raw dairy products; worked on foodborne illness outbreaks attributed to raw milk consumption; handled issues involving on-farm slaughter, custom meat, and poultry processing as well as problems with zoning and local ordinances.

Brook LeVan

Self-Proclaimed Certified Generalist and Cosmic Engagement Officer

Previously an artist of some standing, now incorporating science and alchemy in his work to rebuild our relationship to All of the Life that we collaborate with as farmers and ranchers. He sees his ranch as a laboratory to rediscover a form of deep nutrition that is sorely lacking in our current diets. He claims to be leery of what he knows, as it might get in his way and feels he is perfectly unqualified for what he does every day.

LeVan is co-founder and un-better- half visionary at Sustainable Settings, now in it’s 21st year, a Demeter Certified Biodynamic working ranch, and Whole Systems Learning Center with a 100-family shareholder A2 A2 raw dairy, meat and egg production, a 40-family vegetable and fruit CSA, and most recently adding medicinal herb production. He is co-founder partner of Biodynamic Source – a Demeter certified Biodynamic preparation making and distribution non-profit devoted to healing the earth through utilizing homeopathic therapies, the Biodynamic preparations, and fostering practical multi-disciplinary land stewardship ethics and methods. Constance Lynn

Co-founder of The Boulder Skills Foundation

Constance Lynn has been devoted to local food resiliency since 1988 when she began working at a natural foods coop in Buffalo, NY. Her experience spans decades of working in food coops as well as organic farms across the country. While living in Brooklyn, NY for eight years, she was active in the local food security movement which included running programs for inner city youth in community gardens, community supported agriculture, volunteering for Just Food and working at the Flatbush Food Coop, and later at the Brooklyn Botanic Gardens in their seed saving program. Constance has been involved with seed saving since then including work at Native Seed SEARCH in Arizona and Koanga Gardens in New Zealand.

Constance is currently co-creating a homestead sanctuary in Boulder, Utah with her partner Matt Cochran. There she is a founding member of the Boulder Skills Foundation, the Boulder Seed Collective and Boulder Tree City. Through Night Raven Holistic Health, Constance also offers yoga, classes in local plant medicine, and medicinal plant remedies.

Paula Milby

Analyst and Researcher for Red Acre Center for Food and Agriculture

With roots in a dairy farming family in Indian River, Michigan, she was raised in Las Vegas. Always involved with livestock, she left Vegas in the early Nineties and moved to Cedar City. For 22 years shehas worked for a rancher/farmer with several hundred acres of hay and 2000 head of sheep (give or take a few). She has been responsible for the health management and care of “her girls”.

She is also the technical liaison for a small public water provider and deals with all regulations and requirements to keep the system in compliance with government regulations.

In addition, she was the architect of the “cow share” bill that was so valiantly carried by Marc Roberts and Mark Madsen. This bill passed in spite of significant opposition by all the major special interest groups.

Co-Founder of Biodynamic Source

Lloyd Nelson has been practicing the art of Biodynamic (BD) Agriculture for over twenty years, working extensively on BD projects across the U.S. He is a BD preparation maker, builder, artist, farmer, arborist, BD educator & consultant. He is co-founder of Biodynamic Source – a Colorado based non-profit specializing in high potency BD preparations – and he owns and operates a Biodynamic spray, fertilizer and consultation service in Western Colorado. Matt Palmer

Extension Associate Professor

Matt Palmer has been involved with agriculture from his childhood raising hay, grain and livestock on a ranch in Central Utah. He earned two degrees from Utah State University and has spent the last 18 years working as an Agriculture/4-H Extension Agent in Tooele and Sanpete County. Through this occupation he has developed a wide knowledge base through research and education, keying on sustainable agriculture and grazing. He developed the USU Extension Sustainable Agriculture Education Center and the Sustainable Grazing Institute to teach the science and art of regenerative agriculture. In his spare time he works and plays with his wife and five children running a grass-fed beef marketing business, managing his family ranch, JDP and Pleasant Valley Beefand coaching little league and high school football.

Luke Petersen

Owner of Petersen Family Farm

My name is Luke Petersen. Like you, my past has been colored with losses, gains, a couple of college degrees and a whole lot of life experience. Every morning I awake early and cinch up a belt my dad wore when he walked out onto the farm in his day. I’m responsible for a piece of paper in an office downtown that says Petersen Family Farms LLC, an idea that grows on a beautiful piece of land in Riverton, Utah. My farm is a new branch, grafted into roots my Great Great Grandfather planted in 1871. The fruit of my branch on this tree turned out to be too large to be eaten in one serving, or even by one family. So, I have felt compelled to share it. I’ve learned after trial that it is much too tender to ship. It’s fruit becomes increasingly unrecognizable and unsavory the further it moves from the field. It is enjoyed best through many servings. To some, our fruit is too sweet; to others, too bitter. I have found that when prepared carefully, it has levels. It first feels sweet, then a little bitter, with a sublime, satisfying finish. It’s shown itself to be toxic in high levels, but leaves the diner with the insatiable urge for more. Children and peculiar adults seem to enjoy it most. They find themselves returning often as its flavor tends to deepen some with the seasons and years but its essence remains the same. It is untamed, as large as life, best when shared, close to the vine, and impossible to ship or store, except within the open heart.

Jane Phillips

Jane Philips is in her second year of living full-time in Boulder, Utah. Committed to making a livelihood in such a small rural community she works as a baker, an outdoor and experiential educator, a potter, and is an aspiring farmer. She received a Masters from the University of Montana in Environmental Studies with a food systems focus. Her thesis was a case study of rural food procurement strategies in Boulder where she hopes continue to improve access to both local and regionally grown foods.

Joel Salatin

Owner of Polyface Farms

Joel Salatin, 61, calls himself a Christian libertarian environmentalist capitalist lunatic farmer. Others who like him call him the most famous farmer in the world, the high priest of the pasture, and the most eclectic thinker from Virginia since Thomas Jefferson. Those who don’t like him call him a bio-terrorist, Typhoid Mary, charlatan, and starvation advocate.

With a room full of debate trophies from high school and college days, 12 published books, and a thriving multi-generational family farm, he draws on a lifetime of food, farming and fantasy to entertain and inspire audiences around the world. He’s as comfortable moving cows in a pasture as addressing CEOs in a Wall Street business conference.

His wide-ranging topics include nitty-gritty how-to for profitable regenerative farming as well as cultural philosophy like orthodoxy vs. heresy. A wordsmith and master communicator, he moves audiences from laughs one minute to tears the next, from frustration to hopefulness. Nicole Tomlin

After attending Knit City in Vancouver B.C, the Trailing of the Sheep in Sun Valley ID, and attending Rebecca Burgess’s Wool and Fine Fiber Symposium virtually, Nicole has become fascinated by the world of sheep, fiber and local community resilience. The Boulder Skills Foundation is an inspiring force in the small community of Boulder Utah and for Nicole it has been a source of encouragement and hope while researching land health and sustainable grazing practices. Nicole has spent many years learning how to teach horses at liberty and will be attending sheep shearing school in January.

Narendra Varma

Born and raised in India, Narendra came to the United States in 1986 to attend Brown University. After graduating with a degree in educational technology, he went to work at Microsoft Corporation. Since leaving Microsoft in 1998, Narendra developed a passion for food and agricultural issues, land stewardship, community, local investing, and permaculture. In 2010, Narendra and his wife, Machelle, relocated to Portland, Oregon, to combine these interests and put them into practice. They formed Our Table Cooperative, which strives to create a model community-scale food system by bringing together all stakeholders in the food value chain, from farm to table, as members of a single vertically integrated organization.
